Ever wanted to smoke a brisket or salmon but could not because all you have is the normal round backyard charcoal grill? Well you can and you also may smoke foods just like a pro. See the key to smoking is cooking slow and low. This means long cook times and low cook temperatures. The idea is to indirectly cook the foods with the heat from the smoke and not the fire itself. Most think the only way to cook this way is to buy another grill that is made for just smoking. Not true. Not even close. Below is the steps you take to turn your charcoal grill into a smoker pit. In order to do this, you just need a few simple items. Most of which you likely have around the house already. Here is your list: Standard charcoal grill Wood for smoking. (mesquite, hickory, or oak) You may find these in the grill division of your favored store. A metal 2 quart pan – To place the wood chips in. A porcelain bowl that is used in smokers may be purchased. Water – To soak the wood chips in Charcoal – NEVER use charcoal with lighter liquid infused, you will taste it in the food. Just stick with plain charcoal. First you must soak your wood chips in water and any other seasonings that you want to use. Remember this will accent the taste of the food. After you have exhaustively soaked the wood chips place them in your 2 quart metal pan or bowl with in regards to 2 cups of water. Place this bowl of chips directly in the middle of where you ordinarily place your charcoals. Now place your coals on both sides of the bowl of wood chips. Light your coals and once they are hot and your wood has started out to smoke it’s time to place your meat on the grill. Keep in mind that your feed must stay directly above the water pan. Close your grill lid and close all openings. Keep the grill temperature around 190 degrees and use a meat thermometer to determine when your feed is done. Add coals and more water as necessitated – in regards to each hour.

Comments: As mentions in another post, setting the meat, and smoker maximum and minimum temperatures can get annoying, but you don’t have to select one diget at a time. Holding the button down, you quickly scroll to the temperature you want. The alarm needs to be louder; but it is adequate if you are near the receiver. For smokers, whose cooking time may take twelve hours or more, battery life may be a problem. If there is a battery failure you need to reset the system, after installing fresh ones. Maverick customer support is excellent. My meat probe failed and they sent me one out immediately. I give it 4 out of 5 stars, because I feel the documentation that accompany the ET-73 could better, there should be up down buttons to adjust temperature settings, and a belt clip should be included. 26 of 27 people found the following review helpful. I’d have to say that it looks/feels more like a gadget than a robust measuring instrument but so far it has worked fine. Its design can be improved though. The transmitter on/off switch is ver difficult to reach; every time you want to turn the thing on or off you have to remove the stand and then open the battery compartment to access the switch, whereas in the receiver, the on/off switch is easily accessible on the back of the unit. You cannot easily change the alarms to a lower temperature; you can only increase the setting, so to change to a lower temperature you have to cicle past the topmost temp and start from the bottom. As far as reception range goes it does not go too far if walls are in the way. You have to handle with care the probes’ braided wires, specially were they exit the smoker. Tip: I place a baby monitor transmiter right next to the thermometer receiver and the baby monitor receiver close to where I am; that way I can always hear the Hi/low temp alarms thru the monitor. Warning: you should never leave a fired-up grill unatended and be very carefull when leaving a smoker unaunattended. The competing thermometer (from Poulder) has received very bad reviews here in Amazon. Let’s see how this one turns out as time goes by.
